I don’t know about you, but after the holidays I feel like eating lettuce. Just lettuce. Which is sort of boring, but after eating all the cookies, pies, meats, gravies, and my fill of mashed potatoes I need to do something to lower the scale?
Now, if you’re a reader of my blog, then you know I’m a total #carbhoor. I don’t shy away from potatoes, pasta, and rice. In fact, I’ve stated on more than one occasion that I could easily make a meal of rice with a little butter, salt, and pepper. In fact, I’ve don’t just that. Recently. Granted it was mushroom sauced rice but still.
So, I thought I’d share my love of rice with some healthy rice bowls to get you back on track to eating healthy in the new year. Several of these are already on my menu to make in the coming months. They all look delicious and so easy to assemble for any night of the week.

Foodiecrush packed her Sesame Shrimp with Asian Greens Rice Bowl with tons of flavors! There’s succulent shrimp, edamame, chard, spinach, sesame seeds, and healthy brown rice. Now, don’t frown at brown rice. It has a deliciously nutty flavor I love. More so than plan white rice. If you haven’t tried brown rice, give it a shot. It’s delicious.
